Good Eats #1

I've made this a few time already and it's good stuff. I've also tried it with turkey instead of chicken and it's all good in the hood. Yes, peanut butter can go with chicken. I do want to thank Men's Health for this recipe.

Asian Chicken-Salad Pitas

Servings:
2 people

INGREDIENTS

4 tablespoons peanut butter
2 tablespoons teriyaki sauce (light)
2 chicken breast halves, baked and diced
1/3 cup canned pineapple, drained and chopped
1/4 cup celery, chopped
1/3 cup canned water chestnuts, drained and chopped
1 red bell pepper, diced
1 small red onion, chopped
2 6-inch Whole wheat pita bread

PREPARATION

Mix together the peanut butter and teriyaki sauce in the bottom of a large bowl. Dump in the other salad ingredients and stir everything together. Split the pitas in half, pop 'em open, and fill each half with a quarter of the salad.
